This coffee from Jaime Alvarez's El Carrisal farm underwent a complex fermentation: an initial 24-hour aerobic fermentation, followed by 50 hours in CO₂-enriched Grainpro bags, then drying on raised beds to ideal moisture. The rare San Bernardo varietal, a low-yield Typica mutation, offers a unique profile with floral notes, spices, and medium body.
